Corn Maque Choux

INSTRUCTIONS

1.)  Begin by using a corn cutter or knife to remove corn from the cob.  Be sure to scrape the cob and reserve the sweet milk that oozes out.  Place in bowl and set aside.

2.)  In a skillet or dutch oven, melt butter.  Saute onion, bell peppers, and green onions until translucent.  Add diced tomatoes and garlic.  Cook for five minutes. 

3.)  Add cream cheese and stock to seasoning mixture.  Stir constantly until all ingredients are mixed well. 

4.)  Add corn with the milky liquid scraped from the corn cob.  Mix in cooked shrimp or crawfish.  Season to taste.  Cook for five to seven minutes more.   Serve immediately.

INGREDIENTS


 4 / 5 whole cobs of corn

 1 large tomato diced

 1 medium onion chopped

 1/3 cup diced green bell pepper

 1/3 cup diced red bell pepper

 2 stalks of green onion chopped

 1 clove garlic minced fine

 2 tablespoons butter

 2 ounces cream cheese

 1/3 cup stock (shrimp or chicken)

 1 cup cooked diced shrimp or crawfish

 Dry seasoning blend to taste
