Summer Spinach Salad

Ingredients:

Spinach
Bag
Fresh
Onions
1/2 Cup
Chopped fine
Bell peppers
1/2 Cup
Tri- colored chopped fine
Bacon
1
Cook and crumble one pack
Eggs
4
Boiled and chopped

Preparation mode:

During the summer months when  the temperatures are soaring in the upper 90’s, I try not to use  the oven and stovetop as much so I won’t add to the already hot temperatures. Salads are a perfect way to get good nutrition in without having to cook.  Mixing a variety of greens keeps your salads exciting and appealing. My plan is to have at least one large salad a day during these hot summer months.

Remember eating  raw vegetables offers more nutritional value to your diet.

 

Directions

Use a bag or container of fresh spinach and pick any long stems off. Place spinach on a serving dish. Add chopped onions, bell peppers, crumbled bacon and chopped eggs. Add your favorite salad dressing and enjoy.

Prep time- 20 minutes

Serving size- makes 3 full portion salads
