Salads have always been a favorite for me and the one thing that fills me up. The more fresh veggies the better. Whatever veggies are on sale that week determines what goes in my salad. The base of this salad happens to be shredded iceberg but you can use whatever salad greens you have on hand. Try starting off eating 2 cups of lettuce and then add a variety of other colorful vegetables.
Shred iceberg lettuce or purchase already shredded. Add sliced onions and sliced tri- colored bell peppers. Peel and slice cucumber. Cut avocado in half and spoon out and slice. Add radicchio lettuce and a little broccoli slaw. Top with olive salad.
Feel free to substitute salad fixings that you enjoy. Add your favorite salad dressing.
