Roasted Whole Cauliflower


Olive Oil
3 Tablespoons
Fresh sliced
To Taste
One stick used once cauliflower is roasted.

When it comes to veggies, we have so many ways to prepare them. I tended to steam cauliflower and add butter, salt and pepper and that was pretty much the way we ate them in my home. Sometimes, I would make a white sauce but never roasted a whole one. I decided to try it and it’s a winner!! It’s pretty simple but so full of flavor. It also makes great centerpiece on the dinner table.



Take a whole cauliflower , wash and clean away any leaves off bottom. With a knife, cut away the stem but leave most of it in tact. Do not cut too far into the cauliflower because you want to keep it all connected. Slice garlic and place on top and around cauliflower top. Season with salt and pepper to taste. Drizzle with olive oil and put uncovered in the oven. Bake on 350 degrees for about a half hour. Check as it roasts to make sure it doesn’t get too dark. Add a little water at the bottom of the pan and continue to add as it evaporates. It depends how you like your cauliflower that will  indicate how long you roast it.  If you like it softer , cover once the cauliflower starts to roast.  On the side, melt a stick of butter and when the cauliflower is finished, pour butter over the entire cauliflower.
