- Oatmeal1/2 CupOld fashioned oats
- Protein Powder1 scoopPreferably vanilla
- Fresh or dried fruitOptional- Best fruit-Bananas, Craisins, Blueberries
- Vanilla Extract1 TeaspoonOther choices- Banana, Rum, Almond
I’ve started adding a little more exercise into my life and actually joined a gym near my home. That was the selling point, proximity and price. Also, I am learning what foods I need to eat more and less of while trying to eat healthier. One of the Trainers at the gym shared a recipe for Protein pancakes. They are simple and delicious. Once you make the pancake recipe, you can add any fruit to them. I have never been a fan of oatmeal because of the texture but this is a different consistency. Great protein for a quick breakfast or snack.
You can put oatmeal in blender until flour like substance or if you use the small oats, you can use as is. Mix all ingredients together. Heat griddle, spray with non-stick spray of your choice. Place a 1/4 cp scoop of mixture in skillet. Place fruit on top. Once bottom is brown flip on other side and brown. Add your favorite pancake syrup and enjoy.
Makes 4 pancakes. Double the recipe if needed. They also freeze great for a quick snack.
